Baked Oatmeal

This baked oatmeal casserole is easy to customize and feeds many!

Cream together:

  • 1/2 cup butter (melted)
  • 1/2-1 cup brown sugar
  • 2 eggs


  • 3 cups rolled oatmeal (not quick oats)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1 tsp cinnamon (optional)

Optional (See notes):

  • 2 cups berries (fresh or frozen)
  • apples (diced)
  • raisins
  • peaches (diced, fresh or frozen)
  • walnuts (chopped)


  1. Preheat oven to 350°.

  2. Melt butter in a large bowl in the microwave or a large pan on the stove.

  3. Add sugar and eggs to the melted butter and mix it well.

  4. To the creamed mixture, add oatmeal, baking powder, salt, optional cinnamon and milk. Stir until well combined.

  5. Pour into a 9x13 pan.

  6. With no fruit added: Bake for 30 minutes or until set and lightly browned. With fruit: Bake for 40 minutes or until set and lightly browned.

  7. Serve with milk, cream, whipped cream or yogurt.

Recipe Notes

Baked oatmeal is delicious with just the main ingredients. 


For more variety, add in 2 cups of your favorite berries or other fruit. Or combine your fruit! Blueberries and peaches go wonderfully together. Apples, raisins, walnuts and cinnamon are another killer combination. 


Depending on your family preferences, you can layer your fruit in the bottom of the pan and pour the oatmeal mixture over top. Otherwise, mix the added goodies in with the oatmeal and pour it in the pan all at once.
